Yeast Bread by Dutch Dinwiddie

List of Ingredients
5-1/2 cups flour (sifted)
2 cups 130 degree water (out of hot water faucet)
1½ Tbls instant yeast (like used in bread machines)
2 tsp salt
2 tsp sugar

Instructions:
Combine 3 cups flour, the yeast (dry), salt, and sugar
in a large bowl and mix well. Add the water all at once
and mix for about a minute with a wooden spoon to a
smooth batter. Mix in all but the final ½ cup of the
remaining flour a little at a time, stirring it in with the
wooden spoon. Turn dough out onto a lightly floured
surface and knead for 5 minutes, adding the remaining
flour as needed to keep from sticking. Place dough into
an oiled bowl and turn it to oil both sides. Cover with a
towel and allow it to rise in a warm place until
doubled in volume. Punch down and allow to rest for
5 minutes, covered. Form into a loaf and place it
on an oiled baking sheet. Allow to rise until doubled
and bake at 400 degrees on a center rack for
about 45-50 minutes. When done, remove from baking
sheet and put on a cooling rack to cool. Hot bread
does not slice well and will ball up on the knife.

If you add 1/4th cup of olive oil to the batter
at the beginning, it will be Italian bread,
like I make at the gatherings.
